I work at two different restaurants in NE Pennsylvania. At one place, I'm usually the person who changes the fryer oil out, and it's about 10-15 gallons worth a week. As for the other, occasionally I have to do it.

 I don't know if it's high quality, but it's filtered frequently.

It is vegetable oil used for frying and cooking chinese food.
